I'm back! With another comfort food recipe!

Banana nut muffins feel so nostalgic to me. My mom would make these for me and my brother for breakfast all the time growing up. So when the past few weeks started feeling really overwhelming and it felt hard to make breakfast for myself, I thought it might be good to make something that reminds me of good times. Plus muffins are great because the recipe makes so many!

I wish I had some really great stuff to share with you all, and right now all I’ve got is a muffin recipe. I want to share some wisdom and insight that I’ve gotten over the past few weeks, and I just don’t feel like I have anything.
I want to say that I’m in a stressful season and learning so many great things that I can’t wait to articulate into a well written post to share with you all. And while I am in a stressful season, and I’m sure I am learning so many great things, I’m not entirely sure as to what those things are. Holding onto hope, because that’s all we’ve really got.

Let’s make some muffins!
First, preheat the oven to 375 degrees. Chop the walnuts and spread them on a baking tray. Toast them for 5 minutes. While the walnuts are toasting, brown the butter in a saucepan on the stove over medium heat. Set aside to cool.
In a large mixing bowl, cream together the mashed bananas and sugar for 2-3 minutes. Stir in eggs, brown butter, and vanillas extract. Mix in dry ingredients until combined. Fold in toasted walnuts.
Pour batter into prepared muffin tins. Bake at 375 degrees for 18-20 minutes, or until a knife inserted in the middle of a muffins comes out clean.

I really hope you all are doing well. I haven’t been super active on the blog or my instagram lately, and I’ve really been missing it. I love this time of year. I love the holidays. I love holiday foods! And I know firsthand how hard it can be to navigate holidays surrounding food when you have an eating disorder, or struggle with disordered eating, or body image.

Brown Butter Banana Nut Muffins
Ingredients
- 2 cups all-purpose flour
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 4 overripe bananas
- 1 cup brown sugar
- 3/4 cup unsalted butter 1 1/2 sticks, browned and cooled
- 2 eggs
- 1 tsp pure vanilla extract
- 1/2 cup walnuts chopped
Instructions
- Preheat oven to 375 degrees Fahrenheit. Toast walnuts on a baking sheet for five minutes. Remove and let cool.
- In a large bowl mix together mashed bananas and sugar for 2-3 minutes. Stir in eggs, brown butter, and vanilla extract until combined. Add dry ingredients. Mix until combined. Fold in walnuts.
- Pour batter into prepared muffin tin. Bake on 375 degrees for 18-21 minutes, or until a knife inserted in the middle comes out clean.
