Peppermint Whoopie Pie

These might be my new favorite holiday cookie! These whoopie pies are soft, sweet, and perfectly delicious! Easy to throw together and sure to wow your friends and family, these are your new favorite holiday treat!

Ingredients
  

Cookies

  • 1/2 cup butter softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 tsp peppermint extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt

Filling

  • 1/2 cup butter softened
  • 2 cups powdered sugar
  • 2 tsp milk
  • 1/2 cup crushed peppermints

Instructions
 

  • Preheat oven to 350 degrees. Prepare a baking sheet with nonstick spray or parchment paper.
  • In a large mixing bowl, beat together butter and sugars until creamy. Add peppermint extract and the egg. Mix until combined.
  • Add in dry ingredients. Mix until combined.
  • Scoop 1 tbsp on dough and round into a ball. Set dough 2 inches apart on baking tray. Bake for 6-7 minutes. Let cookies cool on baking tray for 3-5 minutes before moving to a wire rack to cool completely.
  • In a mixing bowl, beat butter on high until smooth. Mix in powdered sugar, milk, and crushed peppermint pieces.
  • Spoon peppermint filling onto the underside of a cookie, covering it. Place the underside of another cookie on top of the peppermint filling to make a cookie sandwich.
